The tiramisu is an Italian dessert made with mascarpone and coffee. The word ‘tiramisu’ loosely means ‘pick me up’ in Italian. The dish lives up to its name as it is one of the most sought after desserts in a bakery. Not all can master the recipe easily, but here is a simple recipe for your aid.
The steps include baking a sponge (cake), coffee syrup and a rich mascarpone layer. There are many variations to the tiramisu, but this recipe is a hallmark one.
To prepare the sponge, whip the egg whites and sugar to stiff peaks. Reduce the speed, and whisk in the egg yolks and honey. Lastly, fold in the flour. Spread the batter in a tray and bake in the preheated oven for 10 minutes
To prepare the coffee syrup, bring the water, sugar and coffee powder to a boil. Remove from the flame, and set aside to cool.
To prepare the mascarpone cream, bloom the gelatin in the water. Cook the egg yolks and sugar gently in a double boiler until thickened and doubled in volume. Mix in the mascarpone carefully (mascarpone splits easily). Heat the bloomed gelatin and add to the mascarpone. Lastly, fold in the whipped cream.
Soak the sponge in the coffee syrup.
To assemble, alternate layers of mascarpone cream, and coffee syrup-soaked sponge. Sprinkle with instant coffee powder. Serve chilled.
